test defs: unset 'AM_UPDATE_INFO_DIR' environment variable

* defs (AM_UPDATE_INFO_DIR): Unset, to be sure to avoid unduly
interferences from the environment.  See also automake bug#11204.
* THANKS: Add entry for David Fang.
